Export requirements for chilled (fresh) meat oblige to also select the conformation of the carcass, and the fat grade, once age, conformation and fat requirements are fulfilled, the meat is labelled HQB (High Quality Beef) and can be shipped to Europe under the HILTON licence.

The higiene standards in Brasilian beef producing plants are extremely high, defenetly much higher than need and probably much higher than many Europeen plants.
